GREEK YOGURT CHICKEN SALAD
Ingredients:
2 cups cooked, shredded chicken
1/2 cup plain Greek yogurt
1/2 cup halved red grapes
1/2 cup diced celery
1/4 cup finely chopped red onion
2 tablespoons chopped parsley
Salt and pepper to taste
Instructions:
In a large bowl, combine the chicken, Greek yogurt, grapes, celery, red onion, and parsley. Mix until everything is well coated. Season with salt and pepper to taste. Chill for 30 minutes before serving for best flavor. Enjoy as a wrap, sandwich, or over a bed of greens!

How to Make Shredded Chicken
Ingredients:
2 boneless, skinless chicken breasts (or thighs for more flavor)
Salt and pepper
Optional: garlic powder, onion powder, bay leaf, or broth for extra flavor
Instructions:
Season the chicken lightly with salt and pepper (and any other seasonings you prefer).
Add to a pot or skillet: Place chicken in a saucepan or skillet and add enough water (or broth) to just cover it.
Bring to a boil, then reduce heat to a gentle simmer. Cover and cook for 10–15 minutes, or until the internal temp reaches 165°F (74°C).
Remove from the pot and let rest for 5 minutes.
Shred the chicken using two forks or a hand mixer for a finer texture.
Let it cool slightly before mixing into your salad.
